A truly delicious dehydrated treat. This keto beef jerky is a great snack plus it only takes TWO hours in an air fryer!
Ive been experimenting with some new recipes in my new air fryer. So far turnip fries have NOT been a success but throwing in some marinated beef worked wonders to transform it into a nice chewy snack.
Now, I made these two ways – one with just some seasoning and no marinade. I found that the marinade jerky took a bit longer that the seasoned ones and it also lost a bit more moisture, leaving them a bit smaller.
When you’re cutting the beef, you want to make sure you cut it fairly thin. Not so thin that you can see through it, but about 1/8th- ¼ inch thick. If it’s too thick, then it will take longer to dehydrate.
When you want to check that the beef is done, take a chunk and bend in 90 degrees. It should tear and you will see the fibres of beef inside and it will NOT be cut in half. If it cracks and breaks – it’s overdone.

What you will need:
Beef slices (Approx 1/8th – ¼ inch thick)
Your favourite seasoning (optional)
Marinade (optional but delicious)
½ cup soy sauce or coconut aminos
3 tbsp sesame oil
1 tbsp minced garlic
For marinating, mix all the marinade ingredients in a freezer bag. Add the beef and marinade for minimum 2 hours.
If using a seasoning, rub the seasoning into the beef strips.
Place one layer of beef into the the tray or bucket of the air fryer.
Dehydrate at 175°F / 80°C for 1 hour and 45 minutes. Check beef jerky to see if it is done and if not, continue to dehydrate in 20 minute intervals.
You will know when the jerky is done when you are able to bend it 90° and it will not break, but bend and crack showing the fibres on the inside. It should NOT break into two pieces.
