In this video, I use my homemade food dehydrator to make a batch of sun dried beef jerky.

BEEF JERKY RECIPE

Lean Meat
– 1 lb Eye of round

Marinade Ingredients
– 1-1/4 teaspoon sea salt
– 1/2 teaspoon onion powder
– 1/2 teaspoon garlic powder
– 1 teaspoon cracked black pepper
– 2 teaspoon granulated sugar
– 2 whole habaneros (3 if extra hot is wanted)
– 2 tablespoon worcestershire sauce
– 3/4 cup cold water / soy sauce

BEST MEAT FOR BEEF JERKY

Beef eye of round, bottom round, and top round are the best meat for beef jerky. Choosing a cut that has very little fat is important, fat will spoil faster and shorten the shelf life of your jerky.

Eye of Round
Hands down, this is the best meat for beef jerky. The most tender of the Rounds. This is a single oval muscle in the rear leg. This is my go to cut of meat when making beef jerky.

Bottom Round
Another great choice of meat for making beef jerky. It is the outer muscle of the upper rear leg. This is the least tender of the rounds. Even though it is the least tender, it makes great jerky!

Top Round
Very similar to bottom round. The top round is cut from the inside leg muscle, opposite of the bottom round. This cut is more tender than the bottom round and less tender than the eye of round.

HOW MUCH MEAT DO I NEED?

After drying, jerky will lose about 2/3 of its weight. My dehydrator holds about 1.5 lbs, which means I’ll end up with about 1/2 lb of jerky.

HOW LONG WILL IT TAKE?

I wasn’t able to cut my meat into 1/8″ strips as I was hoping…they’re more like 1/4″ thick. Because of this, 24 hours wasn’t quite long enough based on my temperature and humidity levels.

SALT & SUGAR HAVE BEEN USED AS A PRESERVATIVE FOR AGES:
1. Salt dries food. Salt draws water out of food and dehydrates it. All living things require water and cannot grow in the absence of it, including the bacteria which can cause food poisoning. Salt is used to preserve beef jerky by keeping it dry.
2. Salt kills microbes. High salt is toxic to most microbes.
3. Solutions high in sugar also have the same effects on microbes, which is why it is used as a preservative of foods, such as jams and jellies.
