For this cook we used about 1.5 lbs of skirt steak and the only ingredients were pepper and salt. The other flavors come directly from the cooking process, lump charcoal and post oak wood.
The goal is to dehydrate the meat with low heat for a long time. We cooked the skirt steak strip at 200 degrees for at least 5 hours.
