Hickory Smoked BRISKET Beef Jerky On A Pit Boss Pellet Grill. When you think of beef jerky, usually you don’t think of using a brisket. But brisket beef jerky tastes amazing! Normally you would use a top round or bottom round because they are lean. The brisket flat portion of a brisket is also very lean and makes a great jerky! Just be sure to remove all the fat you can and also all of the silver skin. Now if you slice it as think as I do, then be sure to cut your brisket jerky in small bite size pieces because you may not be able to bite right through. But the taste is amazing!
