This jerky is SO tender and delicious and easy to make at home! We dehydrated it by smoking it on our Traeger pellet grill, but no worries if you don’t have one as it can be done in a dehydrator or oven. We use beef eye round and let it marinate overnight. You can use this marinade as a guide or create your own! It has wonderful savory notes with a great balance of salty and sweet flavors.

1 pound of beef eye round

1/4 cup soy sauce
1 tbsp Worcestershire sauce
1/2 tsp ponzu sauce
1 tbsp white wine vinegar
1/2 tsp sesame oil
1 tbsp Gochujang sauce
1 tbsp Swine Life Mississippi Grit (all-purpose seasoning rub)
1 tbsp paprika
1 tsp red pepper flakes
1/2 tsp curing salt (pink salt)
2 tbsp honey
1/8 cup brown sugar
1 tsp coarse black pepper
